This is my third attempt at making my own pie crust and the third time I've ended up basically smacking myself in the face. I made a few others that were smaller and flat, being laid on a sheet to bake and those worked rather well. I can tell how thin I may roll it plays a big role, but there's never been a recipe that's not somehow malleable enough to need to be, essentially, ripped in order to break it up into pieces. So as much as my preparation needs work, I could also use a recipe that has some kind of brittleness to it. Even the smaller ones, I made in increasing size to test and the best result was one I didn't have a film which was the smallest smashed onto my forehead, giving it little chance of not breaking somehow. If shaving cream cushioning things in the problem, it's not as big as the crusts simply not being brittle enough. Could anyone help towards figuring out something reliable? I'm not eating these things, so ANY ideas are welcome. I'm mixing, rolling out, properly making, improving, making holes for air- all that, I just can't seem to get it right.
The only sure thing is a store-bought frozen crust, so far.
Welp, I'm no expert baker, but maybe I can help a little...
My first question is, what's the goal? Are you looking for aesthetics, some kind of practical effect, just trying to not bludgeon yourself, or what? To me, that's going to go some way towards determining the answer.
Also, bear in mind that the crust itself isn't the only factor here. A while ago I noticed that Messygirl models often cracked the pie crust before using the pie - that is, they'd bend the pie tin in a couple different directions until the crust broke, and *then* they'd hit someone with it. Depending on what you're trying to accomplish, that might also work.
What they said ^ regardless of crust type I'll go ahead and give it a flex or two first. Even with the baked tortilla type after adding in the filling I'll use the back side of a fork or knife to smack down to the crust to make sure it cracks into a few pieces. It looks a lot better that way.
Right now, I'm looking for a homemade recipe that does well without a plate is all. You can buy waffle cone bowls for ice cream, for example, and if I could figure out how to make something like that on my own- That'd be what I'm looking for.
